This is the strictest portion of the diet. Luckily it only last two weeks. Long enough to correct issues with insulin resistance. You will be surprised by all the yummy meals you get to enjoy.  You’ll will have great omelets for breakfast. Awesome chicken meals.  If you are a cheese lover you can snack on cheese and cold-cuts.  I am going to post a couple of daily meal ideas.  For the first few post I am going to get daily meal plans straight from the book. Then in later post I will share some  of my ideas. If we are lucky maybe we can do a few “how to ” videos. Please comment and share ideas.

Day 1

Breakfast

6 oz vegetable juice cocktail

2 Vegetable Quick Cups

Decaffeinated coffee or decaf tea w/nonfat milk and a sugar substitute. I suggest Stevia

Midmorning Snack

1 part-skim mozzarella cheese stick

Lunch

Sliced grill chicken breast on romaine

2tbsp Balsamic Vinaigrette

Sugar-free flavored gelatin dessert

Mid afternoon snack

Celery stuffed 1 wedge of Laughing Cow Light Cheese

Dinner

Grilled Salmon on Rosemary

Steamed asparagus

Tossed salad (mix green, cucumber, green peppers, cherry tomatoes)

Olive Oil and vinegar

Dessert

Vanilla Ricotta Crème

Almond Ricotta Crème

½ cup part-skim ricotta cheese

1 package sugar substitute

1 teaspoon slivered toasted almond

Mix together the ricotta, lemon zest. Vanilla extract and sugar substitute in a dessert bowl. Serve chilled

Day 2

Breakfast

Baked Eggs with Spinach and Ham

Mid morning snack: Small package of cashews/ Diet Green Tea

Lunch

Chopped Salad with Tuna

Sprite Zero w/lemon wedge

Mid day snack

Turkey Roll Ups

2 tbsp Cilantro Mayoonaise

Dinner

Steak Dinner

Filet or sirloin cut steak

Greek Salad

Grilled Asparagus

Day 3

Breakfast

Light Spinach Frittata with Tomato Salsa

Mid morning snack

kraft cheese squares

Lunch

Grilled Halibut

Chopped Green Salad

Water

Mid day snack

tuna salad over bead of lettuce

side tomato

Dinner

Stewed Tomatoes and Onions

Marinated London Broil

Vegetable screwer
